Bulgur with Avocado, Kale and Roasted Corn

3 cups chicken stock
1 1/2 cups Trader Joes 10 minute Bulgur
2 cups fresh kale, chopped into ribbons
1 big dash onion powder
1 big dash garlic powder
1 hefty shake of basil
1 1/2 cups corn (I used trader joes roasted)
1/2 cup lemon juice
2 small avodacos cubed
1/4 block of cheese cut into small cubes

Put bulgur, kale, corn and chicken stock in a pan that has a lid. Bring to a boil, add onion, garlic and basil. Turn heat down low and simmer for 10 minutes covered. Remove from heat and drain off any extra liquid. (chill 30 min or an hour if you want to serve cold). Add lemon juice, avocados and cubed cheese and serve!
